The Hudson Valley Brewery, which opened Feb. 4 at 2 Churchill St. in Beacon, relies on a traditional European process called mixed-culture fermentation to create its signature farmhouse ales: Make Believe, Amulet and Soleil. It also serves Forever Overhead, a sour IPA brewed with wheat, and Incandenza, which is made with two-row barley, raw wheat and hopped with citra and simcoe.
